Ingredients:
- 2 cups lightly crushed tortilla chips
- 2 tablespoons canola oil
- 6 eggs, lightly beaten
- 1 cup grated cheese (sharp cheddar, monterey jack, or pepper jack)
- 1 cup salsa
Recipe:
- Place the crushed tortilla chips in a bowl and add water to just barely cover until chips are soft.
- Heat the oil in a large nonstick skillet over medium-high heat.
- Stir together the beaten eggs and tortilla chips.
- Put the egg mixture in the skillet, then add cheese, and stir around.
- Let it start to brown up on one side, then scarmble.
- Transfer the eggs to serving plates and top each with salsa.
