Ingredients:

  • 2 cups lightly crushed tortilla chips
  • 2 tablespoons canola oil
  • 6 eggs, lightly beaten
  • 1 cup grated cheese (sharp cheddar, monterey jack, or pepper jack)
  • 1 cup salsa

Recipe:

  1. Place the crushed tortilla chips in a bowl and add water to just barely cover until chips are soft.
  2. Heat the oil in a large nonstick skillet over medium-high heat.
  3. Stir together the beaten eggs and tortilla chips.
  4. Put the egg mixture in the skillet, then add cheese, and stir around.
  5. Let it start to brown up on one side, then scarmble.
  6. Transfer the eggs to serving plates and top each with salsa.
